Banana Oatmeal Chocolate Chip Cookies (Vegan)

Imagine combining banana bread, chocolate chip cookies, and oatmeal cookies…that’s THIS recipe!

Okay…so I am NOT a baker by any means. Measuring out ingredients and having to get everything right, is stressful for me! However, these cookies are super easy and only need 10 minutes in the oven. Best part? THEY’RE VEGAN! These cookies are soooooo good and are sure to satisfy vegans and non-vegans! The recipe is as follows.

Ingredients

  • 2 Cups Oat Homemade Oat Flour (put GF rolled oats into a blender or food processor until it’s a flour consistency)
  • 3/4 Cup Brown Sugar
  • 2/3 tablespoon baking powder
  • Dash of salt
  • 1/4 Cup Virgin Unrefined Coconut Oil (will be melted)
  • Dash of cinnamon and nutmeg (opt.)
  • 2 Flax Eggs (2 tablespoons of flax meal, 6 tablespoons of warm water, mix, and lets it for 5 minutes)
  • 1 banana
  • Vegan, GF Chocolate Chips (Target has them)

Instructions:

Combine flour, sugar, baking powder, salt, cinnamon, nutmeg into a bowl and mix. Make your flax eggs and put off to side in separate bowl to sit for 5 minutes. Spoon out your measured virgin coconut oil into a bowl and heat until liquid, put off to the side. Take one banana, add a splash of your favorite non-dairy milk and blend until smoothie like consistency. (The banana mixture should be about 1/2 cup.) Combine coconut oil, flax, and banana ingredients into bowl with dry ingredients. Mix. Add chocolate chips as desired. You may have to use your hands *warning-this batter is very sticky! Preheat oven to 375, line a baking sheet with parchment paper and bake for 8-10 minutes until bottom are golden brown.

It works out to *roughly 100 Cal, 9 Grams of Sugar, 3.6 Grams Fat per cookie.
