Soy Garlic Peanut Butter Lentils with Vegetables

This sauce has to be one of my favorite sauces to cook with, it’s sweet, salty and garlickly and goes well with just about anything!

You will need
Lentils
Brown Rice (opt)
Snow Peas
Zucchini
Fresh Garlic
Vegetable Broth
Creamy Peanut Butter
Liquid Aminos (or soy sauce)
Almond Milk (or your favorite dairy-free milk)
Ginger
Cilantro (opt)
Black Pepper (opt)

Lentils
Add 2 cups of water to a pot and bring to a boil, once at a boil add 1 cup of lentils, cover and reduce heat and simmer until tender. Once lentils are cooked set them off to the side.

In a saute pan on low heat add a little olive oil, 2-3 tbsp. *liquid amino’s and 2 TBSP on peanut butter. Let the peanut butter melt almost all the way, and then add 1/4 cup of vegetable broth and continue to sautee.
* If you use conventional soy sauce instead of liquid amino’s consider using less because the traditional soy sauce will be much saltier. Consider using the soy sauce to taste.*
Add in 1 cup of your favorite non-dairy milk and bring to a simmer for a few minutes.

Toss in your cut up zucchini and snow peas and simmer until tender.

Serve over a bed of brown rice (opt) and enjoy! Garnish with cilantro and black pepper.
